So, this is the antithesis of Super Bowl food. A big ol’ bowl of nutritious, yet satisfying, greens. Basically, if you eat this leading up to the Super Bowl, you are free to indulge in anything the day of the big game–it’s science.
Since kale is hardy, it stands up to staying in the refrigerator for a few days, which is great for having a healthy lunch or snack at your fingertips. So, with a little preparation, you have no excuse for eating a bag of trail mix for lunch…I mean, not that I’ve ever done that…..
The only problem is, I ate this salad in two days. It was seriously SO good and I felt great eating it too. During these winter months, a nice fresh salad can do wonders for me.
Feel free to top this salad with whatever your little heart desires. I used apples, red onions, and walnuts because I had all of these things on hand. No trip to the store = WIN.
But you could also top with beets, carrots, pine nuts, cheeeeeeeseeeee….you know, whatever strikes your fancy.
The dressing is simple too, made from pantry staples. I like to shake it all up in a mason jar and keep in the refrigerator for a week or two. Then, you have delicious homemade salad dressing in your refrigerator. Again, no excuses for not eating a nutritious meal.
