Cauliflower never seemed too appetizing to me. As a kid, my mom used to munch on it raw. The big white florets just looked bland and unappealing to me. But over the last few months, I have been on a cauliflower kick. Have you tried roasting it??? Tastes like candy! Have you made these Buffalo Cauliflower Bites? Divine!
So, the obsession continues. These are delicious on their own, as a side dish, with a salad, and even yummy topped with an egg as a hash brown replacement. And you know what’s even more amazing??? My toddler loves these “pancakes”, as he dubs them.
A picky toddler eating veggies happily?? That’s a victory. Getting him to stop throwing food…..well, we haven’t quite gotten there yet. Leo looks at me, says “ball”, and throws his food. Mealtime is oh-so-joyous right now. Is anyone else shocked by how quickly their sweet, calm baby turned into a demanding toddler??
